Bob,
The X-Bogosity line is the status line. If you use the '-p' (passthrough)
option, it is added at the end of the message's heeader. Period.
The stats_in_header option refers to additional statistics about how
bogofilter has classified the message. If you use one or two "-v"s with
the "-p", statistics will be included in the message. stats_in_header
determines whethere these statistics will be in at the end of the header
(immediately after the X-Bogosity line and before the empty line that ends
the headeer), or whether these statistics will be at the beginning of the
message body (immediately after the empty line).
Hope this clears it up for you.

P.S. When using the Robinson-GM or Robinson-Fisher algorithm, "-pv"
generates a histogram and "-pvv" generates a list of all tokens (with their
counts and probabilities). Samples of these are shown in the FAQ (in
doc/bogofilter-faq.html or at
