Postfix can be configured to be quite picky, but it doesn't work out
unless you are a _HUGE_ site (with a million customers at the very
least). Just too many sites _I_ want mail from use broken software,
sending Windows-1252 and declaring ISO-8859-1, using unencoded umlauts
(national characters) in headers and all this.

EBay, for instance, violate RFC-2822. The user puts an umlaut into the
description, EBay sends it by mail unencoded.

Fighting broken headers is like fighting windmills. :-(
